Easy-to-Make Healthy Summer Snacks

- Ants on a Log. This is a snack that many people already know and love. Just cut celery stalks into 3-4” pieces. Then spread nut butter on the top and dress them with a few raisins or dried cranberries.
- Caprese Kabobs. Take some grape tomatoes, fresh mozzarella and basil leaves. With toothpicks, spear a grape tomato, a fresh basil leaf and a one inch cube or ball of mozzarella. Drizzle with balsamic vinegar.
- Homemade Fruit Popsicles. This snack takes a little bit of preparation, but it’s a snack that the kids can have fun with. Gather your favorite fruits, combine them with greek yogurt or plain yogurt and a handful of ice and toss them in a blender. Once blended, pour the mixture into a popsicle mold or ice cube tray, freeze for a few hours, and voila! You have a tasty, cooling treat for those hot summer days.
- Banana Ice Cream. Slice bananas and freeze. Once frozen, puree banana slices with a dash of vanilla extract to taste. Top banana ice cream with toppings of choice – mini chocolate chips, berries and chopped nuts make great additions.
- Cucumber Sandwiches. Slice cucumbers, spread hummus on slices and place a piece of turkey deli meat between two cucumbers for a healthy and tasty mini sandwich. For variety, change the flavor of hummus.
